Start by heating 1 tbs. olive oil in a medium skillet over medium heat. Add diced onion and cook for 3-4 minutes until soft, then add ground turkey meat. Break meat up with spoon and when no longer pink, add in taco seasoning and 1/4 cup water. Bring to a simmer and then turn heat to low.
In bowls, tear up kale leaves and distribute evenly. Drizzle on 1 tsp. olive oil into each bowl and massage kale leaves to soften. Season with salt and pepper, then top with taco meat and desired toppings. Drizzle with Avocado Lime dressing if using!

Combine all ingredients except for the water in a small food processor. Add 1 tbs. of water at a time to thin to your desired consistency. Taste for seasoning and adjust salt, pepper or add more jalapeño for more heat!
