1/2cupshredded cheddar cheeseI used a mix of white + yellow
1tbsp.olive oil
kosher salt + pepper
Instructions
Preheat oven to 425 degrees.
Slice bell peppers in half from stem to core. Cut off any stem and scoop out white pith and seeds. Lay peppers onto sheet pan covered in foil and sprayed with cooking spray.
In a sauté pan, heat 1 tbsp. olive oil then add diced onion. Cook until soft about 4-5 minutes, then add minced garlic. Cook one minute then add ground turkey along with 1 tsp. salt and pepper each.
Use a wooden spoon to break up ground turkey as it starts to brown. Once cooked (about 5 minutes), turn off heat. Add in BBQ sauce and stir to mix.
Divide turkey mixture evenly onto bell peppers, then top each with a few sprinkles of cheese.
Bake for 25 minutes or until cheese is melted and golden!
