Start by cooking ground chicken: in a deep sauté pan or dutch oven, heat 1 tbs. olive oil then add ground chicken. break up with wooden spoon and season with 1 tsp. each of salt, pepper, paprika and red pepper flakes. once cooked (about 4-5 minutes), remove with slotted spoon and set onto plate.
In same pan, add a little more oil and then diced onion. cook for 5 minutes then add the pint of cherry tomatoes, turning heat up slightly. cover and cook for another few minutes, then add in 1 clove garlic. after one minute, add in rice and toss to coat. add chicken broth, and bring to a boil. lower heat to simmer and cover, letting cook for about 10 minutes or until most all the liquid has absorbed into rice.
In the meantime, make red pepper sauce if using: combine all ingredients in food processor and season to taste.
Once rice has cooked, turn heat off and add cooked ground chicken, spinach, sliced kalamata olives and crumbled feta. swirl in pepper sauce and serve! this tastes great warm, room temperature and cool.
