If you're making falafel, preheat oven to 450 degrees. Pulse together all ingredients in a food processor, then form balls 2 tablespoons big. Place onto sheet pan lined with foil and sprayed with cooking spray, then bake for 25 minutes.

Peel the cucumber using a vegetable peeler, then slice in half. Cut one half into thin slices. Place into a small bowl and cover with apple cider vinegar.
Grate the other half of the cucumber, then wrap in paper towel and squeeze out as much liquid as you can. Add grated cucumber to another small bowl and add the remaining tzatziki ingredients.
In a sauté pan over medium heat, spray cooking spray then add in cauliflower rice. Season with a little salt and pepper then cook until soft, about 2-3 minutes. Turn off heat and stir in chopped cilantro.
assemble bowls
Divide half of the cauliflower rice into each bowl. Then top with half of cucumber slices, half of feta crumbles, half of minced red onion. Add as much tzatziki sauce as you'd like then top with a few falafel bowls (you'll probably have extra falafel!). Enjoy!
