Spicy Ramen Slaw
Crunchy, spicy, soy and sesame flavored coleslaw is the perfect compliment to your next Asian-inspired meal! Ramen noodles add a delicious nostalgia to every bite.

shredded cabbage + carrot mix

green onions
sliced

packet
ramen noodles
discarding the flavor packet
½
red onion
thinly sliced

avocado
sliced

cup
crushed roasted peanuts
optional
soy-flavored dressing
1/4
cup
liquid or coconut aminos
can sub soy sauce
1
lemon
juice only
1/4
cup
avocado oil
1
tbsp.
ginger paste
or 1" piece peeled + minced

white vinegar
I used rice wine

tbsp.
brown sugar
or honey!

sesame oil
I like to use toasted sesame oil

sriracha hot sauce
to taste

Instructions
Whisk together all ingredients for dressing at the bottom of a big salad bowl.
Add coleslaw, red onions and green onions, breaking apart onion slices as you add.
Using something heavy like a can, crush ramen noodles inside of packaging. Add to salad and toss to combine. Top with avocado slices and serve!
Notes
Dressed salad will save for 2 days in refrigerator!
