1cup peeled garlic clovesbuy pre-peeled to save you time & energy!
1 1/2cupsavocado or olive oildon't worry you'll drain the oil!
kosher salt and pepper
1/2lb.cavatelli or orzo pastacan sub other small pasta shape
2tbsp.fresh basil leaves chopped
Instructions
Preheat oven to 400º.
In a dutch oven or oven safe dish, place feta block in middle and garlic cloves around. Drizzle with 1 1/2 cups of oil or until cloves are mostly submerged.
Season feta and garlic with salt and pepper.
Place dutch oven into oven and set timer for 15 minutes.
Meanwhile, bring a pot of water to a boil and season well with salt. Cook pasta according to directions for al dente (slightly chewy). Reserve 1 cup of water before draining (do not rinse).
On sheet pan lined with foil, place salmon filet on one side, asparagus spears in the middle and cherry tomatoes on the opposite side.
Drizzle salmon and veggies with oil and season with salt and pepper.
After 15 minutes, slide dutch oven over and place sheet pan onto same rack beside the pot. Set timer for another 15 minutes. To make sure garlic doesn't burn, keep an eye on it towards the end of your timer.
After second timer goes off, remove both the dutch oven and sheet pan from oven.
Carefully drain remaining oil in dutch oven.
Gently mash garlic and feta with fork to soften. Add pasta and reserved pasta water to dutch oven and gently stir to create sauce.
Add roasted cherry tomatoes to pasta pot and top with fresh basil. Serve pasta topped with asparagus and salmon filet!
