Sheet Pan Salmon with Baked Feta Garlic Pasta

If you’ve followed me for any amount of time, you may have already picked up on my love of sheet pan meals. What is easier than throwing everything on a pan and walking away from the kitchen, only to have something mouthwatering waiting for you after 20 or so minutes? Basically nothing! Well maybe delivery. Delivery is easier, haha. But not nearly as rewarding, in my opinion!!

For this almost-as-easy-as-delivery recipe, a salmon filet, cherry tomatoes and asparagus roast on a sheet pan, getting goldeny and tender at the push of your Bake button. But what is life without a little carbs?? Enter: Baked Feta Garlic Pasta.

It wasn’t too long ago that baked feta pasta swept the internet… and for a downright delicious reason: basically put, a block of feta cheese and a pint of cherry tomatoes roast together until the feta gets gooey and extra creamy, to which warm pasta and a little pasta water is added. Throw in some basil and voilá! Velvety perfection.

This pasta is similar but we’re amping up the flavor by adding roasted garlic. Garlic cloves, when slow roasted, become sweeter, more complex and melt right into the baked feta sauce. I used a cavatelli pasta (similar to orzo) but really any noodle shape will do — though I’d refrain from using a long noodle as it might break when stirred in.

Okay, let’s break down how you’ll make my Sheet Pan Salmon with Baked Feta Garlic Pasta:

  1. Preheat oven to 400º.
  2. In a dutch oven or oven safe dish, place feta block in middle and garlic cloves around. Drizzle with 1 cup of oil or until cloves are mostly submerged (don’t worry, the oil will get drained).
  3. Season feta and garlic with salt and pepper.
  4. Place dutch oven into oven and set timer for 15 minutes.
  5. Meanwhile, bring a pot of water to a boil and season well with salt. Cook pasta according to directions for al dente (slightly chewy). Reserve 1 cup of water before draining (do not rinse).
  6. On sheet pan lined with foil, place salmon filet on one side, asparagus spears in the middle and cherry tomatoes on the opposite side.
  7. Drizzle salmon and veggies with oil and season with salt and pepper.
  8. After 15 minutes, slide dutch oven over and place sheet pan onto same rack beside the pot. Set timer for another 15 minutes. To make sure garlic doesn’t burn, keep an eye on it towards the end of your timer.
  9. After second timer goes off, remove both the dutch oven and sheet pan from oven.
  10. Carefully drain remaining oil in dutch oven.
  11. Gently mash garlic and feta with fork to soften. Add pasta and reserved pasta water to dutch oven and gently stir to create sauce.
  12. Add roasted cherry tomatoes to pasta pot and top with fresh basil. Serve pasta topped with asparagus and salmon filet!

Yes… there are a couple extra steps but hand to bible, they are EASY and oh so worth it!

Ingredients
  

Sheet Pan Salmon

  • 2 6 oz. salmon filets
  • 1 bunch asparagus ends trimmed
  • 1 pint cherry tomatoes
  • 1-2 tbsp. avocado or olive oil
  • kosher salt and pepper

Baked Feta Garlic Pasta

  • 1 8 oz. block feta cheese avoid light or low-fat
  • 1 cup peeled garlic cloves buy pre-peeled to save you time & energy!
  • 1 1/2 cups avocado or olive oil don't worry you'll drain the oil!
  • kosher salt and pepper
  • 1/2 lb. cavatelli or orzo pasta can sub other small pasta shape
  • 2 tbsp. fresh basil leaves chopped

Instructions
