Ingredients

I use gluten free flour

vanilla extract
Instructions
In a mixing bowl, peel the ripe banana and place it in the bowl. Use a fork to mash the banana until it's smooth and free of any lumps.
Add the egg and vanilla extract. Mix well then add in the flour, mixing again.
Add butter or cooking spray to a nonstick pan and heat over medium.
Pour in batter creating four pancakes and cook for a few minutes until underside is set. Flip carefully and cook through!
Serve warm with peanut butter, warmed jam or maple syrup!
