Baked Feta Sweet Potatoes

medium sweet potatoes
peeled and cubed
2
small shallots
paper removed and quartered

Cloves
garlic
paper removed and smashed

Block
feta cheese
1/3
Cup
basil leaves
in chiffonade
salt and pepper
olive or avocado oil
Instructions
Preheat oven to 375*.
Place feta block in center of lightly greased baking dish, then place cubed sweet potatoes, quartered shallots, and smashed garlic cloves around it.
Drizzle everything with a little oil and season the feta with salt and pepper.
Bake for ~35 mins or until potatoes have slightly crisp edges but are tender through.
Top with basil leaves and stir everything together gently to create creamy potato mixture, mashing garlic with spoon. Serve warm!
