Avocado oil
or olive oil if preferred

Cooked chicken or turkey breast
diced
Fresh sage
minced
Flour
for thickening
Chicken stock
or low sodium chicken broth
Potato gnocchi
Fresh parsley
optional for garnish
Instructions
Heat a large pot over medium heat. Add butter and oil. Once melted, add onion, celery, and carrot. Cook until tender, about 5-7 minutes.
Stir in mushrooms, garlic, salt, and pepper. Cook for another 1-2 minutes. Add chicken and stir.
Sprinkle flour over the mixture and toss to coat the chicken and veggies. Cook for 1-2 minutes before adding the broth. Whisk to combine.
Bring the soup to a simmer, then cover the pot and let it cook for 10 minutes.
Remove the cover and bring the soup to a low boil. Add in gnocchi and cook for 2-3 minutes. Lower the heat to the lowest setting.
Gently whisk the soup once more before serving!
