These no-cook Greek Rotisserie Chicken Pitas are a family favorite, especially on busy nights! The Greek-inspired pita pockets are stuffed with rotisserie chicken, homemade tzatziki, and all of your favorite chicken pita wrap toppings for tons of Mediterranean flavor!

Easy Homemade Greek Tzatziki
1/2English cucumber
1cupGreek yogurt I used 0% fat
1clovegarlicminced
1/2tsp. kosher salt
1/2tsp. black pepper
Pickled Shallots
1mediumshallotpeeled and sliced thinly
3/4cupred wine vinegar
kosher salt & pepper
Instructions
Start by warming your pita pockets by wrapping them with a damp paper towel and microwaving for 20 seconds.
Using a spoon or spatula, add 2 tablespoons of hummus inside each pocket.
Using a spoon or spatula, add 2 tablespoons of tzatziki inside each pocket on the other side.
Add a few slices of avocado to each pocket, then add 1/2 cup of shredded rotisserie chicken to each.
Top each pita pocket with a couple spoonfuls of sliced cherry tomatoes, kalamata olives, a tablespoon each of crumbled feta cheese, fresh dill and pickled shallots.
Serve and enjoy!
Homemade Tzatziki
Use a cheese grater to grate 1/2 an english cucumber.
Wrap the shredded cucumber in a clean kitchen towel and squeeze out any excess moisture.
Place into to a medium bowl and add 1 cup of greek yogurt, 1 minced garlic clove and 1/2 teaspoon each of kosher salt and pepper.
Stir to combine!
Pickled Shallots
Slice a shallot thinly and place into a shallow bowl.
Cover with red wine vinegar and season with a sprinkle of kosher salt and pepper.
