Scoop about 1 teaspoon of goat cheese into the top of each date half, then place a nut half, if using, on top of each one.
Wrap the date with a half slice of prosciutto. It’s best to start at one end and wrap around, ensuring the seal is on the bottom to keep everything intact.
Arrange the wrapped dates on a prepared baking sheet lined with parchment paper, then broil for about 5 minutes, or until the prosciutto is crispy and golden.
Remove from the oven and drizzle with honey, sprinkling a little sea salt and fresh thyme leaves on top for an added touch of flavor.
Serve them warm, at room temperature, or even chilled!
