1lb.ground turkeychicken, or beef: I often use ground turkey for a leaner option, but lean ground beef also works wonderfully.
1packet of taco seasoning: This is where the magic happens! The packet of taco seasoning infuses the soup with that signature taco flavor.
1 15-oz.can diced tomatoes: For a bit of extra flavoryou can use fire-roasted tomatoes if you'd like!
1 32-oz.box chicken bone broth: Chicken broth is a great base for this soupbut you could also use beef broth or a combination of both for added depth.
1 15-oz.can black beansdrained and rinsed: Black beans add a hearty texture and are packed with nutrients.
Instructions
Start by warming 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.
Once the oil is hot, add your ground meat. Use a wooden spoon to break the meat into small pieces. As it cooks, sprinkle the entire packet of taco seasoning over the meat.
Cook until the meat is no longer pink. If you’re using beef, make sure to drain any excess fat to keep the soup from becoming greasy.
Next, add the diced tomatoes and bone broth to the pot. Bring the mixture to a boil.
Once boiling, reduce the heat and let it simmer. This is where the soup starts to come together, and the flavors meld beautifully. Add the black beans and let the soup simmer on low heat for about 10-15 minutes.
After simmering, divide the soup into bowls. I love to top mine with a dollop of Greek yogurt, a sprinkle of shredded cheddar cheese, and a handful of crushed corn chips.
