BBQ Ground Turkey Stuffed Peppers Recipe

We love eating stuffed bell peppers any way I can think of — these Mexican Stuffed Bell Peppers and Italian Stuffed Bell Peppers are staples in our house! Now these lean and colorful peppers can join the rotation.
I could *almost* deem this recipe a “4 Ingredient Fix” because the ingredient list is so small!
GROCERY LIST:
- Bell peppers
- Yellow onion
- Garlic
- Ground turkey
- BBQ sauce
- Shredded cheese
- Avocado or olive oil
- Kosher salt + pepper
You just need a handful of things to make a rich, delicious kid-friendly (and hungry husband approved!) meal.
Here’s how you’ll make my BBQ Ground Turkey Stuffed Peppers:
- Preheat oven to 425 degrees.
- Slice peppers in half and remove stems + seeds
- Sauté onions and garlic until soft
- Add ground turkey, season and brown
- Stir in BBQ sauce
- Stuff peppers with ground turkey mix + top with cheese
- Bake for 25 minutes!
Why use ground turkey vs. ground beef?
Okay both are delicious but bottom line, ground turkey is much more heart healthy! Yall know I use ground turkey (and ground chicken) often because it is still so flavorful! However– I HIGHLY recommend staying away from “lean ground turkey” which is typically just turkey breast and much easier to dry out.

BBQ Ground Turkey Stuffed Bell Peppers
Ingredients
- 4 bell peppers orange, yellow or red
- 1 small yellow onion diced
- 2 cloves garlic minced
- 1 lb. ground turkey
- 1 cup barbecue sauce I like KC style, vinegar-based BBQ sauce!
- 1/2 cup shredded cheddar cheese I used a mix of white + yellow
- 1 tbsp. olive oil
- kosher salt + pepper
Instructions
- Preheat oven to 425 degrees.
- Slice bell peppers in half from stem to core. Cut off any stem and scoop out white pith and seeds. Lay peppers onto sheet pan covered in foil and sprayed with cooking spray.
- In a sauté pan, heat 1 tbsp. olive oil then add diced onion. Cook until soft about 4-5 minutes, then add minced garlic. Cook one minute then add ground turkey along with 1 tsp. salt and pepper each.
- Use a wooden spoon to break up ground turkey as it starts to brown. Once cooked (about 5 minutes), turn off heat. Add in BBQ sauce and stir to mix.
- Divide turkey mixture evenly onto bell peppers, then top each with a few sprinkles of cheese.
- Bake for 25 minutes or until cheese is melted and golden!
