I LOVE a faux-fancy dinner situation—dishes that give off an “I’ve been working on this for hours” vibe but actually come together with little time and even less effort. These pitas are exactly that!

Ground meat is a time SAVIOR—no matter the protein, if it’s ground, it cooks in minutes. We’ve been eating what feels like a billion pounds of ground turkey lately, so I decided to mix things up (slightly) with some ground lamb. It has a richness and complexity you don’t always get with ground white meat.

Now for these pitas… we loaded them with whatever we had in the fridge: avocado slices, crumbled salty feta cheese, spicy hummus, and massaged kale. But they are SO customizable! Chickpeas, cherry tomatoes, red onions, jalapeño slices, olive tapenade—let your imagination run wild!

Spiced Ground Lamb Pitas

Ingredients you’ll need:

For the Lamb:

  • 1 lb. ground lamb (choose organic if possible)
  • 1 tbsp. olive oil
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1 tsp. oregano
  • 1 tsp. paprika
  • 1 tsp. coriander
  • ¼ tsp. nutmeg
  • 2 cloves fresh garlic, minced

For the Pitas:

  • 4 pita bread (white or wheat)

Optional Toppings:

  • Hummus
  • Sliced avocado
  • Dressed greens
  • Crumbled feta

For the Spicy Yogurt Sauce:

  • ½ cup Greek yogurt
  • 2 tbsp. minced jalapeño
  • 2 tbsp. chopped chives (plus more for serving)
  • 1 tbsp. plain almond milk (or more to thin)

Here’s how you’ll make these spiced ground lamb pitas:

  1. Garnish with extra chives if desired, and serve immediately.
  2. In a skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the ground lamb, breaking it up with a wooden spoon.
  3. In a small bowl, mix the salt, pepper, oregano, paprika, coriander, and nutmeg. Once the lamb is nearly cooked (with some pink still visible), add the spice mixture and minced garlic. Stir well and cook until the lamb is fully browned and fragrant.
  4. In a small bowl, whisk together the Greek yogurt, minced jalapeño, chopped chives, and almond milk. Season with salt and pepper to taste.
  5. Chop any additional vegetables you’re using for the pitas.
  6. Wrap the pitas in damp paper towels and microwave for 30 seconds to soften them.
  7. Spread a layer of hummus or spicy yogurt sauce onto each pita. Add sliced avocado on one side and dressed greens on the other (if using). Spoon the seasoned ground lamb into the center and top with more yogurt sauce, crumbled feta, and any additional toppings.

One quick thing about the spice mix: when I was first learning to cook, I’d see a measurement like “one teaspoon” and think to myself, That is a TINY amount, and I can probably skip it. But a teaspoon of spice goes a LONG way, especially if it’s really aromatic! So if you don’t have one of the spices, try not to skip it—see if you can replace it with some of the alternatives listed below.

Savvy tips!

  • If you don’t have or don’t want to use hummus, spread a thin layer of the yogurt sauce in the pita before layering in the ground meat and toppings.
  • Chop your pita toppings while the ground lamb cooks to save even more time.
  • Not a lamb person? No problem—switch it out for ground beef!
  • If you don’t have a spice listed in the recipe, see if you can replace it with something similar: sub cumin for coriander, chili powder for paprika, cinnamon for nutmeg if needed, and red pepper flakes for heat.
  • Warm your pitas by stacking them and wrapping them in damp paper towels. Microwave for 30 seconds and keep them wrapped until you’re ready to use. You can also use a toaster oven—just skip the paper towels!
