Baked Feta Sweet Potatoes Recipe
Perfectly roasted sweet potatoes tossed in baked creamy, tangy feta cheese with herbs makes for a crowd-pleasing side dish!
Remember the viral baked feta pasta trend? I thought baked feta would be delicious on anything (truly, like even a shoe?) so why not jazz up some veggies with the creamy cheese?!
I always love the idea of throwing everything into a dish and letting it roast to tender perfection. Not only does it allow all the flavors to meld together, but it frees up my hands and time for anything or anyone else who might need my attention.

Here’s how you’ll make my Baked Feta Sweet Potatoes:
- Place feta block in center of lightly greased baking dish, then place cubed sweet potatoes, quartered shallots, and smashed garlic cloves around it.
- Drizzle everything with a little oil and season the feta with salt and pepper.
- Bake for ~35 minutes or until potatoes have slightly crisp edges but are tender through.
- Top with basil leaves and stir everything together gently to create creamy potato mixture, mashing garlic with spoon. Serve warm!

Ingredients
- 4 medium sweet potatoes peeled and cubed
- 2 small shallots paper removed and quartered
- 6 Cloves garlic paper removed and smashed
- 1 Block feta cheese
- 1/3 Cup basil leaves in chiffonade
- salt and pepper
- olive or avocado oil
Instructions
- Preheat oven to 375*.
