guac this way to flavor town!

As I type I am staring at the calendar and I cognitively understand that it says “May 2nd” but coming to terms with all that “May 2nd” means is challenging… especially for a Monday. That and putting on pants. Mondays will getcha.

May 2nd means we’re like a month away from summer, two weeks away from graduation (pretending like that still affects me lol), and probably most importantly, only three measly days stand between us and the holy holiday known as el Cinco de Mayo. Time to tap into those two years of high school Spanish and ordenar algunas bebidas, si o si?

…or we could make guac. Extra special guac. The type of guac that you live for!

…because let’s be honest, what is life but meaningless without guac? Let’s not even travel to that dark, dark place. Let’s make this green dip of the gods instead!

ROASTED JALAPEÑO GUACAMOLE

serves 4+

  • 4 avocados, ripe but not too soft
  • 2 jalapeños
  • 2 cloves garlic (with paper on)
  • 1 red onion, peeled and cut into quarters
  • juice from two limes
  • 1/2 bunch cilantro, roughly chopped (optional)
  • salt and pepper

preheat your oven to 400 degrees. Place both jalapeños, 2 quarters of the peeled red onion, and separated garlic cloves onto a baking sheet lined with tinfoil. Drizzle everything with olive oil and sprinkle with salt + pepper. Roast in oven until jalapenos have charred, garlic cloves have softened and onions are tender, about 15 mins. Remove and let cool before handling.

in a large bowl, mash 4 avocados and squeeze in lime juice to prevent browning. Add in chopped cilantro if using. When cooled, chop roasted jalapeños (can remove seeds for less heat, reserve a few tablespoons to top off guac) and roasted red onions (into a small dice) and add to avocado mash. To add the garlic, cut off the top of each clove and squeeze out roasted garlic goodness and add to your bowl.

Stir everything together to incorporate flavors but try not to over mix! You want your guac to have some texture. Taste and season with more salt and pepper if necessary. Serve with tortilla chips and enjoy!
