5 Ingredient Boursin Cheese Pasta Recipe

5 Ingredient Boursin Cheese Pasta Recipe

Who doesn’t love a quick, delicious dinner that looks and feels a bit fancy but is secretly easy?
This 5-ingredient Boursin cheese pasta with chicken and veggies is the kind of recipe that’s
perfect for busy weeknights—I know you’re going to LOVE!! I’ve combined roasted Brussels
sprouts, sweet potatoes, tender chicken, and a creamy, garlicky Boursin cheese sauce to make
a comforting, delicious meal. The flavorful stuffed tortellini gives this dish an extra layer of flavor
that’s so hard to resist.

Why I love this recipe

This Boursin cheese pasta recipe checks all the boxes; it uses simple ingredients, delivers big
on flavor without hours of prep, and takes advantage of Boursin’s creamy garlic and fine herbs
cheese to create a luxurious sauce with little effort. It’s the ultimate easy pasta recipe! To really
make this recipe even easier, I used pre-chopped sweet potatoes and already trimmed Brussels
sprouts (which I highly recommend if you’re short on time!). But of course, if you prefer, you can
always opt for fresh veggies!

Ingredients you’ll need:

● 2 cups trimmed and quartered Brussels sprouts
● 2 cups diced sweet potato
● 1 lb. boneless, skinless chicken thighs
● 1 package tortellini (choose any type you like)
● 1 package of Boursin Cheese

You’ll also need a few pantry staples: avocado oil (or olive oil), kosher salt, and black pepper.

How to make 5-ingredient boursin cheese-pasta

  1. Preheat the oven to 425°F.
  2. Arrange the Brussels sprouts and sweet potatoes on 1-2 foil-lined sheet pans, making
sure the veggies aren’t crowded. Drizzle with oil, toss, and season well with salt and
    pepper.
  3. Roast the veggies in the oven for 20–25 minutes, or until tender.
  4. While the veggies are roasting, dice the chicken thighs into 1-inch pieces. Drizzle with oil
and season well with salt and pepper.
  5. Bring a large pot of water to a boil for the pasta.
  6. Warm a deep-sided skillet over medium heat and add 1 tablespoon of oil. Add the
chicken thighs to the pan and let them brown without moving for 3-4 minutes. Toss and
cook through, until no longer pink.
  7. Once the water is boiling, season it well with salt, then add the tortellini. Cook according
to the package directions, then strain the pasta, reserving a cup of pasta water.
  8. Add the Boursin cheese round to the chicken and pasta, then ladle in a few spoonfuls of
pasta water to help melt the cheese and create a cheesy pasta sauce.
  9. Once the veggies are roasted, add them to the pan and gently toss everything together.
  10. Serve warm and enjoy!

Savvy tips!

  • Store any leftovers in an airtight container in the fridge for up to 3-4 days.
  • If you can’t find Boursin, other soft cheeses like cream cheese or garlic herb cheese spreads will work well as a substitute.
  • For those avoiding gluten, use a gluten-free pasta and confirm the Boursin cheese is gluten-free to adapt this recipe easily.

Variations and Add-Ons

  • Want to make it even cheesier? Add a handful of shredded parmesan cheese or fresh mozzarella to the Boursin sauce for extra cheesiness. You could even try stirring in a bit of feta for a tangy flavor.
  • Don’t have sweet potatoes or Brussels sprouts? Try using fresh cherry or grape tomatoes. If you’d like to add some extra veggies, chop up bell peppers, zucchini, yellow squash, red onion, or carrots small enough to roast in the 20-25 minute time frame. You can also top the dish with chopped fresh spinach for added freshness.
  • Finish with a sprinkle of fresh herbs like fresh parsley or fresh basil for some color and added flavor. A touch of lemon zest or juice also brightens the dish, and a dash of red pepper flakes adds a nice spice.
