How you’ll make my Ground Pork Cauliflower Rice Bowl:

  1. Heat a deep-sided skillet over medium heat and add 2 tsp avocado oil. Once warm, add the ground pork and season with ½ tsp kosher salt and ¼ tsp black pepper.
  2. Break up the pork with a spoon and cook until it’s almost fully cooked, or almost no longer pink, about 4-5 minutes. Stir in Japanese BBQ sauce and cook until the pork is completely done. Remove the pork with a slotted spoon and transfer to a bowl.
  3. For the broccoli:
    • Air fryer method: Place broccoli florets in the air fryer basket, spray with cooking spray, and season with salt and pepper. Cook at 390ºF for 8-10 minutes.
    • Oven method: Spread broccoli florets on a sheet pan, drizzle with a little avocado oil, and season with salt and pepper. Roast in a preheated 400ºF oven for 12-15 minutes, or until crispy.
  4. In the same skillet, lower the heat to medium and add the frozen riced cauliflower stir fry. Cook for 3-4 minutes, letting it steam. Push the rice to one side of the pan and crack an egg into the empty space. Scramble the egg with a spoon, then mix it into the rice.
  5. Assemble the bowls: Add a scoop of cauliflower rice to each bowl, followed by the cooked ground pork and roasted or air-fried broccoli. Top with sliced cucumber, cilantro leaves, and Sriracha, if desired.

Can I make this dish ahead of time for meal prep, and how should I store leftovers?

Yes, this dish is great for meal prep! You can prepare the ground pork, cauliflower rice, and veggies in advance and store them separately in airtight containers in the fridge. When you’re ready to eat, simply reheat everything in the microwave or stovetop. Leftovers will stay fresh for up to 3 days in the fridge, so you can enjoy a quick and satisfying meal throughout the week! Just make sure to let the components cool completely before refrigerating to preserve their texture and flavor.

Can I use a different kind of rice if I don’t want cauliflower rice?

Yes, you can definitely use a different kind of rice instead of cauliflower rice! Jasmine rice is a great option for its soft texture and subtle aroma. Brown rice adds a nuttier flavor and extra fiber, while basmati rice offers a light, aromatic taste. White rice is always a simple choice, and quinoa is a great protein-packed alternative. Just cook whichever rice you choose according to the package instructions, and it will be a perfect base for your pork bowl!

Substitutions + Variations!

If you don’t have every ingredient on hand or want to customize the recipe, here are some simple substitutions and variations to help you get the perfect bowl:

  • Ground pork: Swap with ground turkey or chicken for a leaner option, or even ground beef if you prefer a heartier flavor.
  • Bachan’s Japanese BBQ sauce: No worries if you can’t find it! Try substituting with a mixture of soy sauce, honey, and sesame oil for a similar sweet and savory profile.
  • Broccoli: Feel free to swap out the broccoli for bell peppers, snap peas, or even spinach for a different veggie base.
  • Trader Joe’s frozen riced cauliflower stir fry: You can use any frozen riced cauliflower or make your own by grating fresh cauliflower for an easy, homemade option. Or try a classic bed of rice: jasmine, brown, whatever your heart desires!
  • Large egg: Omit the egg for a plant-based version or swap with scrambled tofu for a vegan alternative.
  • Persian cucumber: Regular cucumbers work just as well, but Persian cucumbers add a nice subtle crunch.
  • Jalapeño: Adjust the spice level to your liking! If you’re sensitive to heat, remove the seeds or swap with a milder pepper.
  • Cilantro leaves: If cilantro isn’t your thing, omit it completely or try a different herb of choice.
  • Sriracha hot sauce: Feel free to add less or more depending on your spice preference!
  • Avocado oil: You can easily swap avocado oil with olive oil, coconut oil, or even sesame oil for a slightly different flavor.
  • Cooking spray: Instead of cooking spray, you can use a drizzle of your preferred oil to lightly coat your pan.
  • Kosher salt & pepper: These are basics, but you could also use garlic powder, smoked paprika, or even a pinch of red pepper flakes + sprinkle of sesame seeds to add extra flavor.

Savvy Tips + Tricks for the Perfect Pork Bowls!

These simple ingredients are easy to find at any grocery store, and you probably already have most of them in your pantry—score!

  • Switch up the veggies: Not feeling broccoli? Opt for some bell peppers, red cabbage, or snap peas instead.
  • Great leftovers: Got some pork bowl leftovers? These bowls make such great leftovers, holding up perfectly in the fridge for the next day.
