Equipment

  • parchment paper

Ingredients

  • 5 large iceberg lettuce leaves
  • 3 tbs. prepared pesto
  • 2 slices deli turkey
  • 1 slice prosciutto
  • 2 slices white cheese like provolone or horseradish cheddar
  • 5 slices red onion
  • ½ small avocado sliced
  • red wine vinegar
  • Italian seasoning
  • salt + pepper

Instructions

  • Start by laying a piece of parchment paper down on your cutting board.
  • On the parchment, lay out the iceberg lettuce leaves creating a rectangular shape as you overlap the pieces.
  • Smear the prepared pesto onto the lettuce with a knife, trying not to move them around much as you do so.
  • Layer on your turkey, prosciutto, cheese slices, red onions, avocado, red wine vinegar, Italian seasoning, salt and pepper onto lettuce.
  • To wrap, start at the end closest to you and use the parchment paper to roll lettuce tightly, pulling the loose end of paper out as you roll away from you. Near the end, fold the bottom of the wrap up to tuck into the roll.
  • Hold the burrito-style wrap at the tucked end and fold back the parchment paper as you eat!
