The epitome of summer on a plate!

Vibrant and bursting with summertime flavors, this side dish gives major main character energy. Creamy, luscious burrata cheese is complemented by fresh cherry tomatoes, juicy nectarines, and grilled corn, while fresh basil and flakey sea salt give this dish the perfect finish.

Here’s how you’ll make my Burrata Summer Salad:

  1. Arrange nectarine slices on the platter first, then the sliced cherry tomatoes.
  2. Break up burrata and add over top of fruit.
  3. Add drilled corn, fresh basil leaves, sea salt, black pepper, and a drizzle of olive oil.
  4. Serve at room temp and enjoy!

Burrata Summer Salad

Ingredients
  

  • 4 Oz burrata cheese
  • 2 nectarines sliced
  • 1 Pint cherry tomatoes halved
  • 1 cob of corn grilled
  • fresh basil leaves
  • flakey sea salt I prefer Maldon Salt
  • black pepper
  • olive oil for drizzling

Instructions
 

  • Arrange nectarine slices on the platter first, then the sliced cherry tomatoes.
  • Break up burrata and add over top of fruit.
  • Add grilled corn kernels, fresh basil leaves, sea salt, black pepper, and a drizzle of good olive oil.
  • Serve at room temperature and enjoy!
