Ingredients You’ll Need:
- 2 lbs. whole fresh carrots, peeled
- 1 tbsp. avocado oil (or you can use olive oil)
- 3 tbsp. balsamic vinegar, divided
- 3 tbsp. honey, divided
- 1/2 tsp. kosher salt
- 1/4 tsp. black pepper
- 4 sprigs fresh thyme

How to Make Honey Balsamic Roasted Carrots:
- Preheat the oven to 425°F.
- Cut the carrots on a diagonal into three pieces per carrot. For larger ends, cut them in half to ensure the pieces are generally the same length and width.
- Toss the carrots with avocado oil, along with 2 tablespoons each of balsamic vinegar and honey. Season with salt and pepper.
- Place the carrots on a parchment paper-lined baking sheet and roast for 20-25 minutes until tender.
- In a small bowl, whisk together the remaining 1 tablespoon of balsamic vinegar and 1 tablespoon of honey. Drizzle this mixture over the roasted carrots.
- Remove the thyme leaves from the stems and chop them before sprinkling over the carrots. Transfer the carrots to a serving plate and finish with a sprinkle of crumbled feta cheese!
For best results, make sure the carrots are spaced out on the baking sheet. Roasting them in a single layer ensures even cooking, allowing the carrots to develop their lovely caramelized exterior.
