These Greek Rotisserie Chicken Pita Pockets are so easy to prepare, especially if when you use shredded rotisserie chicken! Here’s an overview of the preparation process:
Warm the Pita Pockets: Start by warming your pita pockets by wrapping them with a damp paper towel and microwaving for 20 seconds.
Add the Hummus: Using a spoon or spatula, add 2 tablespoons of hummus inside each pocket.

Easy Greek Rotisserie Chicken Pitas
Ingredients
- 1 pita cut in half to create two pockets
- 1 cup shredded rotisserie chicken I used breasts
- 4 tbsp. hummus any flavor
- 4 tbsp. store bought or homemade tzatziki sauce recipe below
- 1/2 avocado sliced thinly
- 1/2 pint cherry tomatoes halved
- 2 tbsp. kalamata olives halved
- 2 tbsp. crumbled feta cheese
- 2 tbsp. chopped fresh dill
- 2 tbsp. pickled shallots, optional recipe below
Easy Homemade Greek Tzatziki
- 1/2 English cucumber
- 1 cup Greek yogurt I used 0% fat
- 1 clove garlic minced
- 1/2 tsp. kosher salt
- 1/2 tsp. black pepper
Pickled Shallots
- 1 medium shallot peeled and sliced thinly
- 3/4 cup red wine vinegar
- kosher salt & pepper
Instructions

- Using a spoon or spatula, add 2 tablespoons of hummus inside each pocket.
- Using a spoon or spatula, add 2 tablespoons of tzatziki inside each pocket on the other side.
