baby vacay schedule | read for tips👇🏼

I’ve gotten some questions on our daily schedule with the babies on vacation so I wanted to share! though we’re only a few days in, we are loving how this schedule has given us so much flexibility to explore!

OUR #1 TIP: ONE GOOD CRIB NAP PER DAY!
babies especially as young as ours get tired easily - after 2-2.5 hours, they’re toast! Make sure they are able to get at least one solid crib nap a day (blackout shades, sound machine, swaddle if using, etc.).

BUSY MORNING SAMPLE SCHEDULE
7-7:30am: wake + breakfast bottle
9:30am-11:30am: in the stroller or baby carrier for exploring (hope for *some* sleep during these two hours!)
11:30am/12pm: lunchtime bottle
1:30/2pm: CRIB NAP
—depending on sleep during morning exploring, nap could come earlier if needed—
4pm: afternoon neighborhood walk - also a great time to get our groceries/dinner pickup
5pm: dinner bottle
6pm: bathtime
6:30pm: bedtime

BUSY AFTERNOON SAMPLE SCHEDULE
7-7:30am: wake + breakfast bottle
9:30am-12pm: CRIB NAP
12pm: lunchtime bottle
2/2:30pm: in the stroller or baby carrier for exploring (hope for *some* sleep during these hours!)

CORNBREAD & PEACH PANZANELLA 🍑 don’t mind me

CORNBREAD & PEACH PANZANELLA 🍑 don’t mind me still savoring stone fruit season over here! gimme allll the peaches while they’re prime. they shine in my cornbread panzanella, which is just an Italian salad with fresh veggies and stale bread or croutons.

CORNBREAD & PEACH PANZANELLA
Serves 3-4 as a side

1 box cornbread mix (check box for additional ingredients needed)
1 pint cherry tomatoes, halved
1/2 hothouse cucumber, peeled and diced
2 peaches, diced
1 shallot, thinly sliced
1 8oz. container herbed/seasoned mozzarella balls, quartered (can sub plain)
Handful of arugula

—tomato balsamic vinaigrette—
2 cloves garlic, minced
1 tbsp. honey
2 tbsp. balsamic vinegar
Juices from cut cherry tomatoes
1/2 tsp. dried thyme
1/2 tsp. salt
1/2 tsp. pepper
1/4 cup of olive oil

1. Start by making your cornbread according to package directions. Let cool completely.
2. While cornbread bakes, slice cherry tomatoes and place them into a colander over a bowl. Sprinkle the tomatoes with kosher salt and let sit for at least 30 minutes while their juices drain into the bowl.
3. In your serving bowl, add cucumber, peaches, shallot and mozzarella balls.
4. Add tomatoes to salad and use bowl of juices for making your vinaigrette. Add vinaigrette ingredients to bowl, whisking in oil. You might want to add more oil based on your preference!
5. Cut cooled cornbread into 1” squares and place onto baking sheet. Spray with cooking spray and put under broiler for 2-3 minutes or until golden brown. Toss gently and repeat once more.
6. Add cornbread “croutons” to your serving bowl then top with arugula.
7. Drizzle with vinaigrette, toss gently and serve!

THE SAVVY SPOON GRATED EGG TOAST
makes one

1 thick slice sourdough bread
softened butter or ghee
1/2 avocado
1 hard boiled egg, peeled
a few shakes of @tabasco
EBTB seasoning from @traderjoes
red chili flakes

optional: vegan cream cheese

spread butter or ghee on both sides of bread and toast in a pan set to medium low until bread is golden browned.

peel half of avocado and slice thinly, fanning pieces out. if using cream cheese, spread a thick layer onto toast before placing on avocado.

take peeled hard boiled egg and grate onto avocado using a small box grater.

top with Tabasco, everything but the bagel seasoning and red chili flakes!

shredded rotisserie chicken
diced orange bell pepper
halved cherry tomatoes
minced jalapeño
fresh or canned sweet corn
fresh cilantro
shredded mozzarella
kosher salt & pepper

HONEY CILANTRO DRESSING 🌿
1/2 bunch fresh cilantro leaves
1 tbsp. honey
juice of 1/2 a lime
2 cloves garlic
1 tsp. salt
1/2 tsp. pepper
1 tbsp. apple cider vinegar
1/4 cup olive oil

combine all ingredients in a food processor while drizzling in olive oil! add more oil if needed to thicken.

easy gf weeknight ground chicken tostadas! file this under another lazy girl recipe you’ll come back to again and again 🌮 keep it gluten & grain free with almond flour torts and a flour-free taco seasoning like from @sietefoods 🤝

WEEKNIGHT GROUND CHICKEN TOSTADAS
makes 4

1 lb. ground chicken
1 packet gf taco seasoning
1/4 cup water
4 grain free tortillas (almond, cassava, etc.)
1/2 cup shredded cheese (divided)
cooking spray

for topping: cherry tomatoes, sliced red onion, lime juice, fresh cilantro

👉🏼brown turkey in a little olive oil over medium heat. when no longer pink, add taco seasoning packet and water. bring to a boil then simmer on low for 10 mins.

👉🏼lay tortillas on sheet pan and spray with cooking spray. bake in the oven at 400° for 7-9 mins.

👉🏼once crispy, divide the seasoned meat between the four tortillas and top each with 2 tbsp. shredded cheese. bake for another 2-3 mins or until cheese has melted.

👉🏼in a bowl, combine sliced cherry tomatoes and red onions with kosher salt and some lime juice. slice jalapeño and chop the cilantro.

👉🏼top tostadas and enjoy!

1/4 avocado
2 pitted medjool dates
2 scoops vanilla collagen protein powder
1 cup frozen strawberries

for cup: splash of coconut cream

make glaze by blending fresh strawberries, the set aside.

blend together remaining ingredients except coconut cream.

add strawberry glaze and coconut cream to glass before adding strawberry filling. enjoy immediately!

1 1/2 oz. tequila
1/2 oz. grand marnier
2 oz. pineapple juice
1 oz. coconut milk
juice from 1/2 a lime
fresh mint leaves

muddle fresh mint leaves in a cocktail shaker, then add tequila, grand marnier, pineapple juice and lime juice. add ice and shake well for 30 seconds.

pour into cocktail glass filled with ice and top with coconut milk! enjoy chilled :)

AIR FRYER HOT HONEY CHICKEN • these crunchy, juicy, golden brown chicken breasts topped with spicy honey are nostalgic and new all at the same time! and we love an 8 minute cook time 💘 recipe below!

AIR FRYER HOT HONEY CHICKEN
serves 4

2 chicken breasts, butterflied in half
kosher salt & pepper
2 eggs, whisked
1 cup panko bread crumbs
1/2 tsp paprika
1/2 tsp cayenne pepper
1/2 tsp garlic powder
1/2 tsp dried thyme
avocado oil cooking spray
spicy honey like @mikeshothoney

preheat air fryer to 390°. take your butterflied chicken (4 pieces total) and season well with kosher salt and pepper.

make dredging station by placing whisked eggs in one shallow bowl, then the panko and seasonings in the other. line a sheet pan with foil.

dip each chicken breast first into the egg, then into the seasoned panko, pressing on crumbs to adhere. place onto sheet pan.

spray your air fryer basket with cooking spray then add in chicken breasts in one layer (you might have to work in batches). lightly spray the coated breasts with cooking spray then cook for 4 mins per side.

drizzle crunchy chicken with hot honey and enjoy!
